Enjoy an outstanding grilled chicken skin

Hakata Kawaya Shirogane

What is the secret method of making the famous grilled chicken skin which has attracted fans of all over Japan?

The outside is crispy and the inside is chewy. This is the first yakitori restaurant known for its “grilled chicken skin”, which is exquisitely cooked with sweet and spicy sauce that soaks into the entire ingredient. The founder of the restaurant spent a lot of time and effort to reach “Meidai Kawayaki (The Grilled Chicken Skin)”, and is proud of the secret method that takes six days from preparation to grilling. Enjoy the Kawayaki which attracts customers not only from Fukuoka but also all over the country.

A perfect match between the “Shigi-yaki” made from softly grilled chicken breast strips with a horseradish soy sauce

It takes a long time to cook the “Meidai Kawayaki”, so it is advisable to order the number of pieces you want first. One person would easily eat ten skewers at least. The “Bara” (Pork Belly, must-eat in Fukuoka) and Chicken Shigi-yaki are also recommended.
